Ring Shaped Pasta

For Sunday lunch, we woke up early and made ring shaped pasta from scratch. Taro also helped me and enjoyed making it.
This is what we made! If you get rid of Parmigiano Leggiano Cheese, it would become "Vegan Pasta". Very healthy.

For Main dish, Pork fillet sautee with fig salad. A little bit bitter rocket, sweeten and sour fig are matching with Rosemary satee pork fillet. If you have varsamico vineger, drizzle them on it. Much more tasty.....

Macrobiotic Sweetpotato Icecream Cookie Sandwich

Adapted from Yamazki Yuki's cook book. She's really geneous indeed. Everything her recipe is very yummy and never fail.
I was not able to prepare for all ingredients the cookbook shows, the cookies became original recipe.
Using Soy milk, rice syrup and maple syrup instead of sugar and daily products, make it such a rich and gorgeous ice cream. Incredible.....
I always find new exciting thing every time I make macrobiotic recipe.

Inaniwa Udon Lunch

Inaniwa udon and deep fried vegetables with glated radish and Ponzu.
Deep fried shrimp head snack for beer lovers.
Taro was excited only being with grandparents.
I like "Inaniwa Udon" especially scraps one since that is shorter size than usual. Proper ones are too long for me.....

Miso Ragu Sauce UDON

Stir-fried Minced pork, chopped garlic and ginger,diced eggplants and green pepper. Season with Sweet bean paste, oyster sauce and doubanjang.

Simmered Fuki(butterbur stem)

This is called "Fuki" which is very common spring herb in Japan. Simmered with Dashi broth.
A little bit bitter, but Taro liked it.
Garlic chives and Mizuna Naml
Season with sesame oil, glated garlic and S&P

Minutes Pickles with Chinese pepper
Cut various kinds of vegetables into bite size, salted and soften them by squeesing(we call it Shio Momi. Salted and squeese)
Marinated sugar, rice vineger and Chinese pepper. It is very helpful only if you make "Shio-momi" vegetables and keep it in a fridge. It is kind of preservative food.

Lunch Box on May 23

This is my traditional Japanese lunch box

You might think we always have super-high calories western food, but we always adjust our stomach condition having Japanese low-calories food lunch box.
Brown rice has lots of vitamin and fiber. Jun doesn't like brown rice so much, but having brown rice once a day is really good for health. Whatever he says, I always put it into his lunch box;P

Seafood Lasagna Night

Learnt it at Kotkotopasta. White sauce and shrimp and flatfish in it. Very creamy and light taste compared to lagu sauce lasagna.

~Quick and Easy Toasted bread with garlic~
Recently I am into garlic toast. This recipe is very easy and light taste.
Toast baguette and rub them with raw garlic. Sprinkle sea salt and drizzle extra vergine olive oil on it. Eat hot!

This salad is very easy and quick, kids might be willing to eat them.

Mix Corn, Sliced (0.5cm) cucumber(salted and soften them by squeesing), petit tomatos, Italian parsley, mayonnaise and add a little bit yoghurt together. Season with S&P and paprika powder. That's all!

Afternoon Tea Party at Madam Masako's.

Today I took a leave for a meeting at my son's school. After that, visited Madam Masako's place.

Egg, Ham, Curry Chicken!(spicy but a little bit sweet), tomato, smoked salmon and cucumber.

She went to London several months ago and has been attracted the afternoon tea in London. She made super gorgeous sandwich for us!! This is the stunning beautiful sandwich we had EVER!
According to her recipe, spread butter on the both side of bread is the key to beautiful sandwich.
I always admire for her presentation. This is what we call " ELEGANT" itself.
I am going to try this elegant sandwich next time. :)

Macrobiotic Pumpkin Cake

Macrobiotic sweets have attracted me these days. Adapted from this cookbook.
Besides sauteed pumpkins, raison, pumpkin seed and walnuts in it.
Even if you ate it a lot, you would never feel sick. That's macrobiotic magic.
I will study it more and more for our health.... :)

Tofu with zha cai pickles

This Tofu sauce is amazingly beautiful. Chopped cucumber, green papper,zha cai pickles, ginger, green onion, Myoga herb and Shiso herb. Drizzle sesame oil and soy sauce on Tofu.
If only you have food processor, it takes only 3 minutes to make it.

After dinner, we had watermelon. Summer has come!

Simmered mackerel in Miso sauce

Good morning from Cebu.
My blog has been silent for a long time...... but I am going to look back to our meal last month!

This night's menu
Mackerel in Miso sauce with shreded ginger.
Bloccoli salad with tiny fish Tsukudani.
Potato and seaweed Miso-soup

He's dying for raining since he wants to wear rain coat and rain boots.

Grilled Cheese Sandwich

Grilled Sandwiches quite often appears to our breakfast. :)
Melting Cheeeeeeeese!
Recommend you to use "Maribo cheese" if you make this sort of sandwich and use this grilled sandwich maker.

Scrambled Eggs

When you make scrambled egg, should never hesitate to use a plenty of butter and fresh cream, and anyone would make it.

- 4 eggs
- 50~70cc of fresh cream
- a knob of butter
-Sea salt and freshly ground black pepper

-options- add some cheese, mushroom, tomatoes and whatever you like.

1 Lightly whisk the eggs, cream and a pinch of salt together until all the ingredients are just combined and the mixture has one consistency.

2 Heat a non-stick frying pan for a minute or so, then add the butter and let it melt. Do not allow the butter to brown or it will discolour the eggs. Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a heat-resistant rubber spatula. Gently push one edge of the egg into the centre of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until the eggs are softly set and slightly runny in places, then remove from the heat and leave..... Done!!

Noodle Salad ~Hiyashi Chuka冷やし中華~

The season of Cold noodle salad has come! Last year, we had it on May 22. Almost all the same as the one we had last year. Just the difference of shaped of chicken. Shreded or Sliced.
I prefer the first one.

Gobo(burdock roots) & Beef DON

Japanese people care for Teriyaki taste.
Sautee Gobo and Sliced beef. Season Teriyaki sauce(soy sauce, Mirin, sake and sugar). Wrapped with soft boiled eggs. No need to add "Dashi". Beef and Gobo have lots of Dashi essence.

Spicy meat ball with turmeric rice

When I made humburg, made spicy meat balls at the same time. Braised meat balls and some vegetables in tomato sauce. Next day, I added curry powder and had them as curry and rice.

Broccoli salad with tomato dressing. Always have Shiso herb in salad these days.

My sister is also crazy about cooking. Since her acquaintance visits at her place, she prepares for loads of sweets and snacks for one day! Incredible! To keep cooking is to blow off some steam for us maybe... :P
