Tuna Night



Grilled Tuna & Pumpkins with balsamico and roast almond

Pão de queijo

For breakfast, I woke up early and bake Pão de queijo. Taro doesn't like hot food but he tried eating it.
Jun was doing exercise. (sit-ups for abdominal.)

CENCI

Cenci is one of traditional sweets in Italy. They eat it for a carnival. When you bite it, the lemon flavour comes out in your mouth. Very beautiful.
We have it for breakfast. Matching with coffee very much.

Cenci Recipe

Ingredients

2 tablespoons olive oil
25g sugar
a pinch of salt
150g all purpose flour
1 egg
1 tablespoon Rum liquor
Grated lemon peel (a half)

olive oil for deep frying
powder sugar

Method
Place all ingredients in a large bowl. Knead well until smoothed the surface.
Cover a wrap and Leave it for 10 minutes.
Put flour on the table. Roll out the dough until it is about 2mm thick.
Cut out rhombus shape using a knife.
Heat the oil to 180℃ and deep fry them until golden colour.
Sprinkle powder sugar when eat.

Just deep fried is the best taste,but even it's cool down, still yummy.

Fried Dumpling!


May say Chinese ravioli as well.:ーP
Stuffed loads of chopped cabbage and minched pork.
Serve with Jun's garlic chilli oil
Vegetable soup

He loves this sort of stuff. Now he measured at 90cm long and weighed 13kg.
Compare to other 2-year-old boys, he is quite tall.

Ravioli ali Funghi Porcini

Long time no blog! Somehow I didn't feel like blogging and just had a sleep a lot beside Taro these days. Perhaps I might be busy for work.

I totally forgot shooting the inside of this ravioli. As for the stuffing, besides porcini, added ricotta cheese, onion, and parmigiano leggiano cheese.
This is quite tough for me to make a proper and cute shape. Need enough calculation that where I should put stuffing on the dough.

Absolutely yummy and Taro devoured it.

Salad Noodle

Loads of Salad on Noodle.
Since I made simmered pork shoulder and kept the broth, made this salad noodle.
For salad, drizzle sesami oil and S&P. When serve, squeeze Sudachi citrus. I recommend this shirimp noodle. very tasty and it takes only 2 minutes to boil.

Two colour Fresh Pasta (Spinach and Egg )

Made two kinds of pasta from scratch. Learnt it from "Kotokotopasta".
Recently I might get the trick of making pasta from scratch. I mean I got the sense of treating the dough and was able to make it quickly.
Anyway, as for the sauce, we had mushroom cream sauce. Chopped saute mushroom and fresh cream plus this special herb spice. A slightly hot but Taro was able to eat them.


This herb mix is very helpful to make yummy "Aglio Olio, E Peperoncino"!

He left green colour pasta.He seems not to admit the green colour for pasta.

Oatmeal Roll Buns

It's been AGES since I baked bread last. To warm-up, I baked this oatmeal roll buns.
For Taro, I added a little butter in the dough so that he is able to bite them easily.

Ingredients
-400g Flour for bread
-50g Rye flour powder
-50g Oats
-31/2 teaspoon beet sugar
-2 teaspoon dry yeast
-1 1/2 teaspoon salt
-1 tablespoon unsalted butter
-340cc Water

I skip to tell you the method since those who usually bake bread must know how to make it. This time I added 2 teaspoon dry yeast, but you may reduce the amount of yeast as much as possible and take a enough time to leaven them.

This buns with homemade apple jam and mascarpone cheese are awesome. Otherwise this bread with tuna paste( tuna+Mascarpone!).
Am not sure whether he loves this bread or Mascarpone though. :P

Frozen Plum Yoghurt


He shouts out "Tsumetai~!!(Cold~!!)"
then he kept having it.

Frozen Plum Yoghurt Recipe

Ingredients

-Fresh plum → Add sugar and simmer them until jam. Any fruits jam would be fine.
-Yoghurt
-Fresh cream (whipped lightly)
- Cinammon and Allspice

Method

Mix all ingredients together and put them into a freezer. That's all!
The key is the beautiful flavour of cinammon and allspice.

Dinner with my friends


Salami and Fig!
Roast Pork with sweet potato and dried apricot!
Cheeeeese (Saint Andre and Gorgonzola) + Tomatoes
Gobou(burdock root) Salad

Besides these dishes, I made fresh pasta and lotus root salad.
Moreover, my friends brought some beautiful sweets.
We might get too much calories........

Autumn Dinner


Grilled Tuna. Serve with steamed bloccoli and "Sudachi" citrus.

Chicken Stew

This is very typical Japanese Western style soup called "Cream Stew".
Some people may add white sauce in chicken soup, but I added milk and Parmigiano Reggiano in the stew. When you make it, you should use chicken drum or wings instead of chicken thigh/breast. Their bones make the soup more rich and tasty.
Sometimes I use Taro instead of potatoes. That would be more Japanese taste and go with rice.

He didn't eat it at all. Sigh.....

Lotus roots salad


Rocket, Lotus roots(sliced and boiled), mushroom and cottage cheese
Plus
lemon juice, extra virgin olive oil and S&P

This is SUPER YUMMY~~~~~~!!!!!!
when you boil lotus, you should add rice vineger in the boiling water so that the lotus colour would become more white and blight.


Tonight's Taro
Somehow he became a lefty tonight.
He has had cough since last Wednesday. Poor Taro-chan.... but his appetite is OK.
Now he weighs 13.2 kg !!! He's been getting heavy each day!
