My signature Granola


Made my original granola. Apparently this is much beautiful,healthier and it costs cheaper than the bought one. Taro loves it very much. He likes to eat it as soy milk porridge. :)

Here's my recipe.

Ingredients
-2 cups organic rolled oats
-1 cup various nuts and seeds ( this time, I added chopped almond and walnuts, pumpkin seeds and coconuts)
-plenty of various dried fruits as you like
(I chose chopped apricots,orange peels, fig, red currants and raison)
- 5 tablespoons of maple syrup
Method
Preheat the oven 150℃.
Put the oatmeals, nuts and seeds and maple syrup in a large bowl. Mix together.
Spread them on the baking tray.
Bake it for 30 minutes, stirring mixture every 10 to 15 minutes. Put coconuts on the tray in the last 1 minutes of done. Let cool. Stir in dried fruits. Store in an airtight container.

Macrobiotic Apple&Sweetpotato Tart

This recipe is still imperfect so far, but I 've found how to make it better. No matter how Jun gets tired of it, I will bake it again:p

Autumn has come!

I've just found there is blogger application and can be blogging using iPhone!
Since getting comfortable weather, I am baking some tartes almost everyday. Morning sick seems to be over. A baby in my tummy is kicking me quite often. Probably a baby girl will come over to us:) Must think about girls name!
Baked macrobiotic fig tart. Baked more than three times this season. Yes, i am insane. Luckily, Taro is crazy about it, whereas Jun got fed up with it. He wanted to eat figs as fresh. Have to get fresh fig again for Jun;p

Macrobiotic Birthday Cake!

Baked Macrobiotic Birthday cake for my friend. Adapted from this cook bookI love. For cream, soy bean curd paste instead of fresh cream. It takes a certain time to make it, but it is worth making it.

This is totally different from the usual one. Please do not compare with it. But this macrobiotic cake is very healthy and never feel sick even if you ate it too much.

Macrobiotic Sweetpotato Icecream Cookie Sandwich

Adapted from Yamazki Yuki's cook book. She's really geneous indeed. Everything her recipe is very yummy and never fail.
I was not able to prepare for all ingredients the cookbook shows, the cookies became original recipe.
Using Soy milk, rice syrup and maple syrup instead of sugar and daily products, make it such a rich and gorgeous ice cream. Incredible.....
I always find new exciting thing every time I make macrobiotic recipe.

Macrobiotic Pumpkin Cake

Macrobiotic sweets have attracted me these days. Adapted from this cookbook.
Besides sauteed pumpkins, raison, pumpkin seed and walnuts in it.
Even if you ate it a lot, you would never feel sick. That's macrobiotic magic.
I will study it more and more for our health.... :)

Amanatsu Marmalade Jam





serve it with cottage cheese on slice of bread.

Got organic Amanatsu citrus and made marmalade jam. I like bitter taste of the peels, so I didn't drain out of the boiling water many times.
I totally forgot measuring each ingredients precisely, so next time I will show you the recipe.
(maybe next Amanatsu season:P)

Pumpkin Doughnuts




This is the second challenge to make doughnuts. This time I used pumpkin instead of potatoes.

Perfect taste.

Do not think about the calories while eating...... :P

Baked Apple

Cinammon, raison, butter, maple syrup and a plenty of red wine.
bake 200℃ around 30-40 minutes.



Serve with vanila ice cream.


If the baked apple left, you can make bread pudding.


Soak bread into egg and milk. Add leftover apples and re-bake again.

LOVE DOUGHNUTS!




Probably this is the first time to make Doughnuts using yeast. To more surprise, besides flour, mush potatoes into it. Amazing. (potato:flour=1:2)Very light and fluffy texture.

He 's really into "Enoden" which is local train running in Kamakura area. Always playing with this train otherwise watching Youtube video about Enoden. Crazy....

Condensed milk jelly

Before serve, pour red currants sauce on it.
What a lovely jelly!!
Condensed milk Jelly
Ingredients
-100cc Condensed milk
-250cc Fresh milk
-1teaspoon gelatin (take it and soak into 3tbsp water for a while.)
Method
Put condensed milk and fresh milk in a sauce pan and heat them.
Add gelatin and dissolve it. Pour the jelly into a mold/glass refrigerate until it becomes firm.

Peanut Brittle


Leftover condensed milk and passed-the-best-before-date peanuts really had irritated me.
I tried not meeting them when I opened the fridge. But the time has come to cope with them...
I googled recipes using condensed milk and peanuts, then came up with an idea to make "Peanuts Caramel"!
The one I made should be chewing and soft, however to be made was very solid and crispy.
I googled this weird snacks like "Florentin without cookies" and turned out it is called "Peanut Brittle"!!
Anyway, it seems to get success to make "Peanuts Brittle." :P

Macrobiotic Apple Cake


Adapted from "Macrobiotic sweets cook book".This is super yummy ever! You may be surprised that NO sugar, eggs, butter and milk in it.
I made it as same as the book cover photo. Yeah! :D

I would like to bake more but now scheduled blackout are done so we must save any excessive electlic power. Plus somehow flour and eggs are gone at any supermarket. Everyone got them just in case..... But who uses flour? It's not survival food at all! This is very problem. :(
It would be better for me to stop baking several weeks until the food supply will recover as usual.

Baking 2 kinds of pie


Since I found a pie sheet in the freezer, baked cherry pie and sausage pie.
Cannot stop baking such a serious day.....

Red Currants Jam


It is a great idea to make fruits jam to keep myself calm in such an emergency. The smell of red currants are fulfilled with my kitchen and I am able to remain calm.
And the colour of jam are very attracts me and feel happy.

Rare Cheese Cake 2



After "couscous lunch", we had this for dessert. Actually I made this rare cheese cake one year ago. But this time, the crust was slightly different.
Instead of "ritz cracker", I used cocoa bisucuits before I baked in failure. Luckily I was able to get success for recycling it. To add nutmeg and cinammon powder in the crust is my recipe.

Rapsberry Scone(macrobiotic)



Taro likes to drizzle honey to eat.

I made apple raspberry jam. But I found out the raspberry seeds were very annoying. Strained through a fine mesh sieve to catch the seeds as much as possible. Despite that, the sieve didn't work well. Came up with the idea to recycle the left of plenty of seeds and ground.
I added them to soy milk scone. Since the rapsberry seeds+ a little bit jam were too juicy, I had to add more flour. But I am not sure how much flour I added.
Anyway, finally I managed to bake scones and it seems to get success. :) Actually, it was very yummy. Somehow I didn't annoy any seeds when eat.

Here is the basic method to bake soy milk scone.

Soy milk scone recipe
Dry Ingredients
-70g whole wheat flour
-200g all purpose flour
-2 teaspoon baking powder
-1/2 teaspoon salt
-65g rape seed oil
-110cc soy milk
-45cc maple syrup

Method
0 Preheat the oven to 190℃.
1 Sieve all dry ingredients into a large bowl.
2 Add oil and mix together using your hands until dried
3 Add wet ingredients(soy milk and maple syrup) and whisk using a spatula until the dough come together.
4 Transfered to a lightly floured surface, knead a dough.(30~40 times)
5 When the surface become smooth, wrap it and leave for 30 minutes.
6 Roll the dough and make shape circle. Cut 8 pieces and place them on the oven pan.
7 spread soy milk on the surface of scones.
8 Put them into a oven and bake for 20 minutes.
Serve 8

When you would like to add some filling such as rasion and choco chips, add before method 5.
Do not over mix the dough after adding the filling. Just folding them together.

Soy Milk Pudding




This is his favourite Big soy milk pudding lately.



Drizzled Maple syrup instead of caramel sauce.
( I think it would be healthier than burnt sugar caramel. it might be just my illusion though :P)

~Soy milk Pudding Recipe~
Ingredients
-250cc soy milk
-1 egg
-2 table spoon beet sugar
-maple syrup (as you need)

Method
1 beat an egg and suagr in a large bowl
2 Add soy milk and mix together
3 Strain through a fine mesh sieve to catch any bits of unincorporated egg white.
4 Pour the mixture into glasses/ramekins, up to 1~2cm from the top edge of the ramekins.
5 Put a tea towl into a big saucepan and put ramekins on it. Pour enough water into the saucepan, up to 2cm from the bottom of the ramekins.
6 Put the lid and heat on high heat. When it boils, heat on low heat for 4 minutes. After that turn off the heat and leave it for 10-15 minutes.

serve 2 big cups

tips: method 3&6 are the key to make soft and smooth texture.
