Condensed milk jelly

Before serve, pour red currants sauce on it.
What a lovely jelly!!
Condensed milk Jelly
Ingredients
-100cc Condensed milk
-250cc Fresh milk
-1teaspoon gelatin (take it and soak into 3tbsp water for a while.)
Method
Put condensed milk and fresh milk in a sauce pan and heat them.
Add gelatin and dissolve it. Pour the jelly into a mold/glass refrigerate until it becomes firm.

Stir fried minced pork, chopperd garlic and ginger, diced eggplants and green pepper.
Season with sweet soy bean paste, oyster sauce and Doubanjang.

Pickled Takana Stir Fried Rice & Boiled Dumpling

Long time no blog....Back to March 24's dinner.
That night, my friend gave me several bunch of celery, so I made celery dumplings and pickles.
When it comes to dumplings, Taro is spontaneously having vegetables. Dumpling is the best idea to have Taro take lots of vegetables without notice. :P
The soup is called "Mozuku"which is a sort of seaweed like noodle.

This stir-fried rice is called "高菜炒飯(Takana-Chahang)”. Takana is one kind of mustard leaf pickles. dried tiny sardin (Shirasu) and Takana are very matching for stir fried rice.

Tsuke-Men漬け麺Lunch

The noodle serves cold but the soup should serve hot!

I am not always making anything from scratch. If I could be a full-time mom, I would do my best to make everything and anything as much as I can. But am not so free. I have full time work.
How can I save time and offer yummy meal for my family?
Making use of helpful service and finding organic and safe processed food-These two things are my solution so far.
This "Tsuke-men noodle" I got at Radish-Boya. Radish- Boya that is one of the organic food delivery service. I am a very heavy user of this. Probably 70% of our food expenses come from Radish Boya.
You might think organic food is slightly expensive, but they deliver every week at in front of your home! I can save time to go shopping on Saturday morning and play with Taro or clean up room instead. I absolutely choose the latter one.
Of course, occasionally I go to a supermarket to buy some foods for Taro's fun. He loves to see various food and vegetables getting on a trolley and expect his mother would get something sweets or big round pizza for him :P
I would like to say that I do not hesitate about using processed food if only I could confirm they are safe and yummy. It might be my excuse though. :)

Asian Lunch

Ingredients
kangkong(空芯菜/通菜, ground pork and chicken, peanuts, onion, tomato, garlic and ginger
Seasoning
Oyster sauce, Miso, Sugar, Fish sauce and Soy sauce
Plus Brown rice and sunny-side up.

Can you imagine what is the dish taste like?

Peanut Brittle


Leftover condensed milk and passed-the-best-before-date peanuts really had irritated me.
I tried not meeting them when I opened the fridge. But the time has come to cope with them...
I googled recipes using condensed milk and peanuts, then came up with an idea to make "Peanuts Caramel"!
The one I made should be chewing and soft, however to be made was very solid and crispy.
I googled this weird snacks like "Florentin without cookies" and turned out it is called "Peanut Brittle"!!
Anyway, it seems to get success to make "Peanuts Brittle." :P

Macrobiotic Apple Cake


Adapted from "Macrobiotic sweets cook book".This is super yummy ever! You may be surprised that NO sugar, eggs, butter and milk in it.
I made it as same as the book cover photo. Yeah! :D

I would like to bake more but now scheduled blackout are done so we must save any excessive electlic power. Plus somehow flour and eggs are gone at any supermarket. Everyone got them just in case..... But who uses flour? It's not survival food at all! This is very problem. :(
It would be better for me to stop baking several weeks until the food supply will recover as usual.

Oyako-Don

As I didn't have "Mitsuba(Japanese herb)", I used "chervil" instead.
I go to work as usual even though the disaster has been happening. Maybe most people living in Tokyo go to work as long as the company is told to be on stand by at home.
Taro went to nursery school. But Jun picked up him earlier than usual. We want to stay with Taro as much as we can.

Baking 2 kinds of pie


Since I found a pie sheet in the freezer, baked cherry pie and sausage pie.
Cannot stop baking such a serious day.....

Red Currants Jam


It is a great idea to make fruits jam to keep myself calm in such an emergency. The smell of red currants are fulfilled with my kitchen and I am able to remain calm.
And the colour of jam are very attracts me and feel happy.


The day after Japan Earthquake



We all are safe& Fine!

When quake happened, I was having meeting in progress at Kitasenju(northan Tokyo).
All commute were stop, so I had to go home by walk for 15km in high-heels!!! It took 5 hours. Never walked such a long distance before.Got really worn out.
Jun was at his office and he picked Taro up as soon as the quake stop.

In Tokyo, we didn't damaged so much, but Tohoku area has been really serious.
Only I can do is to pray and hope for Japan and try to spend time as usual as much as I can especially for Taro:)

LOVE TORAYA YOKAN♥



My father got TORAYA's Yokan for Taro. This small package one is easy to bite for him.
After dinner, he always request "Yokan please!". I do not want to pass through in front of Toraya shop... Sigh....
Since he's really into Yokan, he rung to his grandpa and told him to buy Yokan when he comes.
I am 100% sure that Grandpa will buy loads of Yokan for Taro.....

When you get fresh squid, please keep the guts. Their guts have "Umami" a lot!

Pão de queijo Lunch

On March 9, I took leave and went Taro's new nursery school. The new school is located to near Jun's office so that they won't have to get on the train any more.
I often bake "Pão de queijo". Recently I get the mix powder at Cuoca. Because it is more easy than collecting all ingredients such as tapioca powder which is very expensive.
I prefer add "Edam cheese" in it rather than Parmigiano Leggiano. Edam cheese is more clear and salty.

In regard to the soup, I arranged the leftover of osso buco.

Deep Fried Chicken Thigh with green onion sauce

Sweet and sour taste goes with deep fried chicken!

Marinated chicken thigh with soy sauce and Japanese sake. Fried chopped 1~2 green onion well season sugar, vinegar and soy sauce. Flour/potatostarch them and deep fried until golden brown.

Nagaimo Fritter

To make fritter, I added baking powder in the batter so that the batter is going to be very spongy.

By the way, just before the going to bed, Taro started to create "Ginza line at the Shibuya station". The work represent the congested rush hour in the train. :D

Squid Shaped Pasta (review)

I made it finally! Look at the beautiful shape! Yeah!
Which is the squid or pasta?
Actually my uncle didn't realised he ate pasta!
(He thought he ate only squids. Hahaha!)
For relish, my favourite Buntan Salad.

I do not like cleaning squids as my eyes meet squid's eye while cleaning. Very scary. However, to enjoy the taste fantastic squids, I am able to finish clean up them. :)

Kamaage Udon w/ sesame paste sauce



Our family is very prefer "Inaniwa Udon" which is very popular in Akita(Northan part of Japan).
Sometimes this sort of simple meal are welcome. But the sauce should be rich and thick.
But we wanted to have another dish, so I made deep-fried small fish. Taro also enjoyed them.
