Rare Cheese Cake


Made non-baked cheese cake for Jun's request.
I think this is Japanese style cheese cake. Haven't you ever heard of it in your countries, have you?
He spontaneously helped me to decorate the cake!
Just mix all ingredients together. You may use graham cracker or marie biscuit instead.
Adding spices for crust make it more exotic taste. :)

Rare Cheese Cake Recipe~18cm round cake pan~

Ingredients

- 250g cream cheese( heat it in the 500w microwave for 30 seconds.)
- 60g sugar
- 200cc fresh cream
- 1 lemon juice
- 1/2 grated lemon skin
- 8g gelatine powder( mix 3 tablespoon water in a small bowl and set aside)

~for crust~
-75g crushed Ritz cracker
-40g melted unsalted butter
-Nutmeg and cinnamon powder as much as you like

Method
1 Make crust.Combine crushed crackers, cinnamon and nutmeg powder, and melted butter in a bowl. Press the crumbs into the bottom of a round cake pan. Put it into the fridge until get cool.
2 Stir cream cheese and sugar in another bowl until incorporated.
3 Add fresh cream and mix together.
4 Add lemon juice and grated lemon skin and mix together.
5 Heat water and gelatine powder in the 500w microwave for 30 seconds. Add gelatine into the bowl. Mix together.
6 Pour the filling into the crust and spread evenly.
7 Refrigerate the cake for 3 hours.
8 Serve with your favourite fruit.
